This was the last ride of the season. It was so nice to get out and enjoy the wonderful, warm weather we have been having. We rode and rode until almost too late and before we got back to the truck the sun had set and we {the kids and me} were cold! So much F.U.N.

I've never broken any bones ~ mine or any one else's for that matter! I am surprised that this has been my fate ~ I am very klutzy. I am constantly having to watch my feet if I am not walking on a perfectly smooth and flat surface. So knock on wood that I can keep up the good work...
Sunday nights FHE was a huge success. I put on my Bree Vandicamp face and had a sparkling clean home, with a wonderful dinner planned. Everyone arrived and the thirty-seven of us tried to find a place to sit down and enjoy ourselves. There was a little shuffling of items returned to the original owner that were left at someone else's house. And it was very noisy, but thankfully for our new little basement play room, I think, everyone had a good time.
Laura has been feeding my addiction ever since she needed help reserving books through the Salt Lake County Library on-line. I meticulously noted her library card number and have been reserving DVD's for myself ever since! Davis county has zilch!!! And now that I finally gave in and got the DVR, I can watch all of the shows that I tried not to become hooked on because I would fatefully miss an episode or rearrange my entire life so that I wouldn't... {I LOVE THE DVR!} So I am trying to get caught up on what I have missed. She was able to smuggle me the first two seasons of the Housewives and I watched bits and pieces with the kids interrupting frequently. Well last night she dropped of the first four discs to the third season. Even though I was so exhausted ~ I stayed up through the night and watched everything I had. And so now I am so, so tired and now I need a fix!!!Lasagna Recipe:
12 ounces ground beef & sausage combination
7½ ounces tomatoes
8 ounces tomato sauce
6 ounces tomato paste
2 teaspoons dried basil
1 teaspoon dried oregano
6 dried lasagna noodles
1 egg, beaten
2 cups cottage cheese
¼ cup grated Parmesan or Romano cheese
8 slices mozzarella cheese
For sauce, brown meat; add onion powder and garlic powder. Drain fat. Stir in un-drained tomatoes, sauce, paste, basil, oregano, and pepper. Bring to a boil, reduce heat. Cover; simmer 15 minutes, stirring occasionally. Meanwhile, cook noodles for 10 to 12 minutes or till tender but still firm. Drain noodles; rinse with cold water. Drain well. For filling, combine the egg, cottage cheese and Parmesan cheese. Layer three of the cooked noodles in a large rectangle-baking dish. Spread with half of the filling. Top with half of the meat sauce. Repeat layers. Top with slices of mozzarella cheese. Bake 375° for 30 – 35 minutes or till heated through. Let stand 10 minutes before serving. Make ahead directions: after assembling as above, cover and refrigerate for up to 24 hours. Bake, covered 375° for 40 minutes. Uncover, bake about 20 minutes more or till hot. Let stand 10 minutes before serving.
